Preheat the oven to 350°F.

Use a 9 5 inch loaf pan and spray with a non-stick spray or line with aluminum foil and spray with a non-stick spray to come out easily for slicing.

In a bowl, combine the brown sugar and cinnamon. Set aside.

In another medium bowl, beat the white sugar and butter together with an electric mixer until smooth and creamy.

Stir in eggs, 1 at a time, until smooth; add vanilla extract.

Mix and whisk the flour and baking powder in another bowl and add to the cream butter mixture and stir until blended.

Mix the milk in the dough until smooth.

Pour half the dough into the prepared loaf pan; add half the apple mixture and half the brown sugar/cinnamon mixture.

Lightly pat the apple mixture into the dough.

Pour the remaining batter over the apple layer and add the remaining apple mixture and the remaining brown sugar/cinnamon.

Lightly pat apples in dough; toss brown sugar mixture through apples with knife or spoon.

Bake until a toothpick inserted in the centre of the bread comes out clean, about 50-60 minutes.

To make the glaze, combine the powdered sugar and the milk or cream together until well blended.

Let cool for about 15 minutes before pouring the icing
