*INGREDIENTS:
°10-12 for toasting bread slices
°1/2 stick softened butter
°1/4 cup light brown sugar
°3 tsp cinnamon
°2 eggs
°3 tablespoons milk
°2 tablespoons granulated sugar
°1 tsp cinnamon or to taste
°optional powdered sugar
°2 tablespoons of butter to cook more if necessary
*INSTRUCTIONS:
In a small bowl, combine the butter, sugar and cinnamon. Beat until smooth.
In another bowl, combine the granulated sugar with the cinnamon and set aside. In a shallow bowl, beat the eggs with the milk and set aside.
Remove the bread crust and flatten the slices with a 1/8-inch rolling pin. Spread a thick layer of cinnamon filling on each slice of bread.
Roll the bread gently but firmly around the cinnamon filling. Continue with the remaining bread.
Heat a nonstick skillet over medium heat and melt about 1 tablespoon of butter. Coat the rolls in the egg mixture and place the seam down. Cook 3-4 rolls at a time.
When golden, turn a quarter turn and continue until all sides are cooked and golden brown.
Roll in cinnamon mixture or sprinkle with powdered sugar. Serve warm and soak in maple syrup if desired.
